A vivid, true-to-life crushed green-leaf note — think freshly torn stems, cucumber peel and unripe pear. The acetal delivers the classic cis-3-hexenol impression but in a rounder, more stable form, giving a natural leafy-fruity freshness without the harsh metallic bite of the free alcohol.AI · claude-opus-4-7

Appearance

Colorless oily liquid.

Solubility

Practically insoluble in water, soluble in alcohol and oils.

Odor

Powerful, oily-green odor with a sweet, vegetable-like undertone.

Uses in perfumery

The acetal is also an interesting item as a topnote ingredient in modern perfumes, as a modifier for Galbanum/Styrallylester complexes, in Oakmoss bases, etc.

Uses in flavor

It is unstable under acid conditions, and therefore not recommended for flavors in which acid is used.

Production

1) from Acetaldehyde and cis-3-Hexenol. 2) from Vinyl-cis-3-hexenyl ether and cis-3-Hexenol.
