Acetonitrile is a laboratory solvent, not a perfumery aroma chemical. It has a sharp, ethereal, faintly sweet solvent odor reminiscent of ether or acetone, with an irritating pungency. It is toxic and has no legitimate use in fragrance formulation.AI · claude-opus-4-7

Appearance

Colorless liquid

Solubility

Miscible with water. Insoluble in aqueous salt solution. Soluble in alcohol and essential oils, perfume chemicals, etc

Odor

Agreeable odor, mild and reminiscent of Bitter Almond oil, but less pronounced than Butyronitrile

Uses in perfumery

Could be used in perfumes, but is probably too unstable in presence of moisture.

Uses in flavor

Not recommended for flavors, although toxicity is much lower than that of hydrocyanic acid.
