Descriptors
cinnamic

A protected form of cinnamic aldehyde that slowly releases a softened, rounded cinnamon-spice character. Smells warm, sweet and balsamic with a powdery cinnamon facet, but without the harsh, skin-irritating bite of free cinnamaldehyde. Used as a milder, more stable substitute in fine fragrance and functional bases.AI · claude-opus-4-7

Appearance

Almost colorless, slightly viscous liquid.

Solubility

Practically insoluble in water, soluble in alcohol, propylene glycol and most perfume and flavor oils.

Odor

Soft, tenacious, natural Cinnamon-type odor, not nearly as harsh as Cinnamic aldehyde, yet rich and lasting as the aldehyde itself.

Uses in perfumery

Has been suggested for use in place of Cinnamic aldehyde where the alkali-instability of the aldehyde is a disadvantage.

Production

Produced from Cinnamic aldehyde by condensation with 2-Methylpentane-2,4-diol.
