A soft, sweet balsamic material with a gentle cinnamic-floral character reminiscent of dried flowers and mild spice. Low-key and diffuse on its own, it acts largely as a fixative, adding warmth and a honeyed, resinous facet to floral and oriental bases.AI · claude-opus-4-7

White crystalline powder.
Insoluble in water, soluble in alcohol and oils.
Mild-spicy, tenacious and balsamic odor. Freshly prepared and pure grade materials are odorless to many people, faintly 'musky' to others.
Used in flavor compositions for imitation Butter, Caramel, Raspberry and in a multitude of Fruit flavors.
Used as a fixative for Oriental fragrance types, heavy florals such as Hyacinth, but in general, this ester is too expensive for such purpose, since good fixation requires a considerable amount of crystalline material (up to 10 percent or more), and a similar fixation can be achieved with less expensive crystalline fixatives.
Concentration is usually up to 15-18 ppm in candy.
Produced from Cinnamyl chloride plus Sodium benzoate or from Cinnamic alcohol and Benzoic acid by azeotropic process.
