Descriptors

A warm, spicy-aromatic material recalling cumin seed but softer and more rounded than cuminaldehyde, with a fruity-herbal facet from the acetate group. Less sweaty and pungent than cumin oil itself, giving a dry spicy warmth useful in oriental and spice accords.AI · claude-opus-4-7

Appearance

Colorless liquid

Solubility

Very slightly soluble in water, somewhat soluble in alcohol, soluble in most oils.

Odor

Very faint, green-woody spicy odor.

Flavor

Resembling sap from wood, yet overall dry.

Uses in perfumery

Not very interesting as a perfume material. Its poor solubility, its acidity and not very rare odor type may well rule it out of the “library” for perfumers.

Production

1) by oxidation of Cuminic aldehyde (evt. in presence of water). 2) by oxidation of para-Cymene under alkaline or acid conditions.
