A soft, sweet anisic aroma reminiscent of anise and fennel but rounder and less sharp than anethole itself. The reduction of the propenyl double bond mutes the licorice bite and reveals a warmer, slightly balsamic-herbal facet.AI · claude-opus-4-7

Appearance

Colorless liquid.

Solubility

Very slightly soluble in water, soluble in alcohol and oils.

Odor

Sweet-herbaceous, quite powerful odor, less candylike and more dry, almost woody, as compared to Anethole.

Flavor

The taste is sweet and typical anisic, yet not as intensely sweet as Anethole, and it lacks the typical Anethole feature of a very wide margin of concentration in application, particularly in flavor compositions.

Uses in perfumery

It finds some application in perfume compositions, particularly in low-cost masking odors for industrial purposes, detergent perfumes, household fragrances, etc.

Uses in flavor

It is used in flavor compositions for Licorice, Rootbeer, Birchbeer, Spice blends, Vanilla imitation, Wintergreen, etc.

Production

1) by hydrogenation of Anethole. 2) by methylation of para-Propyl phenol.
