Solubility

Soluble in water and alcohol, almost insoluble in oils.

Uses in perfumery

Various patents cover the use of Ethyl esters of amino acids as odor-enhancers in perfumery, but there is but little proof yet as to the value of the esters for that purpose.

Production

Produced by selective ethylation of Z-aspartic acid. The acid can be obtained from the natural asparagine, the beta-amide of the acid. It is found in soybeans and other foods, and it can be produced synthetically.
