A sweet, phenolic-balsamic aroma reminiscent of hay, vanilla, and sweet almond with a soft powdery facet. Warm and slightly medicinal, it bridges coumarinic hay notes with a mild floral-balsamic sweetness.AI · claude-opus-4-7

Solubility

1.4% soluble in water, soluble in alcohol, but poorly soluble in most oils.

Odor

Very faint, sweet-woody-balsamic odor. Chemically pure aldehyde is virtually odorless.

Flavor

The taste of this aldehyde is sweet with little or no other flavor impression. The sweetness is perceptible in aqueous solutions of less than 1° aldehyde.

Production

1) from Phenol in the manufacture of Salicylic aldehyde (which is the ortho-isomer). 2) from para-Aminobenzaldehyde by Diazoreaction. 3) from Phenol and anhydrous Zinc cyanide in Benzene, followed by hydrolysis.
