Descriptors
oilycheesy

A creamy, fatty aldehydic material with a soft rose-geranium facet and a waxy, slightly soapy body. Less sharp than straight nonanal — the hydroxyl group tempers the citrus-metallic bite into something rounder and more floral, with a persistent oily-clean drydown.AI · claude-opus-4-7

Appearance

Colorless or very pale straw-colored oily liquid.

Odor

Oily-pungent, somewhat cheesy-nut-like odor, overall rather unpleasant. The herbaceous notes are concealed in an oily character which leans toward the rancid note.

Flavor

This aldehyde has been suggested for use in flavor compositions, e. g. Cheese, Nut, Butter, etc. but does not seem to have attained any success in this field.

Production

Produced by Aldol-condensation of Acetaldehyde and Heptaldehyde.
