Appearance

Colorless oily liquid.

Solubility

Almost insoluble in water, soluble in alcohol and oils.

Odor

Sweet woody, somewhat spicy and warm odor of moderate tenacity. The fruity notes resemble Cherry — milder and sweeter, less pungent than Benzyl acetate, also less floral.

Flavor

Sweet fruity taste reminiscent of Banana and Cherry.

Uses in flavor

This material is mainly used in flavor compositions (the para-isomer is more commonly used in perfumes). It finds application in imitation Cherry, Pear, Banana and other fruits, in Tutti-frutti and other fruit complexes, etc.

Production

Produced from meta-Tolylchloride (which contains some para-isomer) with aqueous alkali under reflux, followed by esterification of the alcohol.
