Appearance

Colorless mobile liquid.

Solubility

Soluble in water, miscible with propylene glycol, glycerin, alcohol and oils.

Odor

Diffusive and fresh, ethereal-fruity, pear-like odor of poor tenacity.

Flavor

Sweet raspberry-pear-like taste in concentrations near 20 ppm.

Uses in perfumery

Propylacetate is rarely used in perfume compositions, except occasionally as part of top note compositions or additives to citrus colognes, etc. to introduce ethereal lift and volatile freshness with the alcohol and the initial notes of the fragrance (when used in alcoholic solution).

Uses in flavor

The ester is widely used in flavor compositions as a major (by volume, not by flavor power) part of strawberry, raspberry, blackcurrant, apple, pear, cherry, peach, pineapple, melon, cucumber, rum, etc. and in 'tutti-fruitti' type to support the 'flavor burst' initially.

Production

Produced by azeotropic esterification of n-propanol with acetic acid.
