Appearance

Colorless oily liquid.

Solubility

Insoluble in water, miscible in alcohol and oils.

Odor

Heavy-fruity, almost pungent sweet odor with floral undertone and moderate to poor tenacity.

Flavor

Sweet-fruity, berry- and plum-like taste in concentrations below 20 ppm.

Uses in perfumery

This ester is less useful in perfumes because of its greater volatility and an odor type which lends itself more to middle notes than to top notes in a fragrance.

Uses in flavor

It is used occasionally in flavor compositions, mainly in imitation berry flavors in trace amounts.

Production

Produced by azeotropic esterification of iso-propanol with benzoic acid.
