fruitygreenfattywiney

A fruity-waxy ester with a fatty, slightly winey character reminiscent of pineapple skin and unripe pear. Green and oily in the drydown, with a natural rind-like nuance rather than the candy-sweet profile of shorter-chain fruity esters.AI · claude-opus-4-7

Appearance

Colorless oily liquid.

Solubility

Almost insoluble in water, soluble in alcohol and oils.

Odor

Green-fruity, winey, slightly fatty odor of rather poor tenacity. The fruity notes resemble the odor of juice from green grapes (also called white grapes).

Flavor

Tart-fruity, winey, mildly oily-green taste in concentrations below 40 ppm. Not very pleasant at higher levels.

Uses in perfumery

It may find use as part of imitation Cognac oil and other materials for 'winey' topnotes, and in Geranium compositions, Ylang, etc. where the Brandy-winey character can be of interest.

Uses in flavor

It finds use in imitation Apple, Coffee, Cognac, Rum, Grape, and in various berry complexes, Tutti-frutti types, etc.

Production

Produced by azeotropic esterification of n-Propanol with n-Heptanoic acid.
