A light, volatile fruity ester with a sweet, rum-like, slightly ethereal character. Reminiscent of pear and apple skin with a faint pineapple facet, flashing off quickly to leave a clean sugary trail.AI · claude-opus-4-7

Colorless mobile liquid.

Solubility

0.5% soluble in water, miscible with alcohol, propylene glycol and oils.

Odor

Fresh-ethereal, fruity odor with fermented-winey note and poor tenacity.

Flavor

Fruity, rum-like taste in concentrations lower than 100 ppm.

Uses in flavor

It finds some use in flavor compositions, mainly in fruit complexes, 'tutti-frutti'-types, rum imitation, etc. It produces great 'lift' to the flavor and is quite compatible with most fruit flavors.
