A light, diffusive fruity-ester note with a green apple and pear character, layered over a slightly ethereal, herbaceous edge reminiscent of isovaleric solvency. Fresh and volatile in isolation, quickly fading to a soft fermented-fruit nuance.AI · claude-opus-4-7

Appearance

Colorless mobile liquid.

Solubility

Very slightly soluble in water, soluble in alcohol, propylene glycol and oils.

Odor

Ethereal-fruity, diffusive and winey, pineapple-type odor of poor tenacity.

Flavor

Sweet-fruity, pineapple-like taste in concentrations below 50 ppm.

Uses in perfumery

The title ester is rarely used in perfumes. Traces may be used as part of topnote compositions for floral bases.

Uses in flavor

It finds some use in imitation pineapple, and as refreshing note in nut flavors, where most of the active ingredients have rather heavy aroma. It brings a pleasant lift to such flavor types, and its fruity contribution may be kept at a minimum by proper dosage.

Production

Produced by azeotropic esterification of iso-propanol with iso-valeric acid.
