Alpha-pyrone (2H-pyran-2-one) has a soft, sweet-hay coumarinic character with creamy coconut-lactonic and mildly herbaceous facets. It reads like a lighter, more diffusive cousin of coumarin, with a smooth tobacco-hay warmth and a subtle nutty-milky undertone.AI · claude-opus-4-7

Appearance

Colorless or pale straw-colored oily liquid.

Solubility

Very slightly soluble in water, soluble in alcohol and oils.

Odor

Pleasant hay-like, herbaceous-warm odor of moderate to poor tenacity.

Uses in perfumery

This ketone has been suggested for use in perfume compositions as a modifier for Coumarin and coumarinic materials. It would undoubtedly be a valuable candidate for further experiments in Fougéres, Chypres, Lavender and Citrus compositions.

Production

Produced from Diethyl oxalate plus Ethyl crotonate via 2-Pyrone-6-carboxylic acid. Decarboxylation of that acid yields the title ketone.
