As a minor ingredient in Cherry-blossom (mostly a fantasy-fragrance) or Lilac, Lily, Muguet, Rose, etc. it is quite popular for its lifting and sweetening effect. It has a 'repairing' effect upon Anisaldehyde, which is commonly available in a rather mediocre fragrance quality, rarely as an impeccable, olfactorily pure quality.
Larger amounts are used in flavor compositions, partly as a modifier for Benzaldehyde, partly as a sweetener in fruity complexes, Cherry flavor, Coconut, etc.
Produced from Toluene with Carbon monoxide and Hydrochloric acid in the presence of Aluminum chloride and Cuprous chloride.
