Veratraldehyde, with the CAS number 120-14-9, is a synthetic aroma chemical known for its distinctive sweet, woody, and slightly floral scent profile. It is often used in perfumery to impart a fresh and clean character, making it suitable for a variety of fragrance types, including floral, fruity, and green accords. In formulations, Veratraldehyde typically serves as a middle or top note, contributing to the overall complexity and brightness of the scent. It can enhance the longevity of lighter notes and is sometimes employed to create a more rounded and harmonious blend. As with many synthetic aroma chemicals, Veratraldehyde is subject to safety and regulatory considerations. It is important for perfumers to be aware of any potential restrictions or guidelines set forth by organizations such as IFRA, as well as to consider its allergenic potential in formulations. While specific usage levels may vary, Veratraldehyde is generally regarded as a versatile ingredient in the perfumer's palette. — AI-generated summary, 2026-09-02.

Appearance

White crystals, or cream-colored, fused mass.

Solubility

Almost insoluble in cold water, soluble in hot water, alcohol and oils.

Odor

Very sweet, woody-Vanilla-like or Heliotrope-like odor of excellent tenacity. Some observers find a haylike or Coumarin-like note in this material.

Flavor

Warm and sweet-herbaceous Vanilla-like taste in concentrations below 40 ppm. The flavor effect is similar to that of Heliotropine, but not nearly as perfumey.

Uses in perfumery

Veratraldehyde is not frequently used in perfumes. A pure grade of Veratraldehyde is an excellent perfume material with more warmth and depth than Vanillin, and excellent effect in Oriental type fragrances, woody-musky bases, etc.

Uses in flavor

The material finds some use in flavor compositions, mainly in imitation Vanilla, Nut and Butterscotch, but also in various fruit complexes. The concentration used is normally about 10 to 30 ppm in the finished product.

Production

Produced by methylation of Vanillin with Dimethylsulfate in mild aqueous alkali.
