Warm, richly spicy aroma dominated by eugenol — clove-like and phenolic with a peppery lift and a soft balsamic, slightly woody-sweet undertone. The oleoresin form is denser and more tenacious than the distilled oil, with a rounded, almost resinous depth behind the initial spice heat.AI · claude-opus-4-7

Appearance

Pimenta berry oleoresin is usually a dark brown viscous liquid or heterogeneous mass of a grainy paste at the bottom of an oily liquid.

Odor

The sweetness and naturalness is striking, and the small amounts of resinous matter give the extract an exceptional tenacity and richness in body.

Flavor

In respect to flavor, it is superior to the essential oil by far.

Uses in flavor

A great number of the larger flavor extract consumers prepare their own type of pimenta berry extract according to specific needs for spice blends to the canning industry.

Production

The steam distillation of crushed pimenta berries requires up to 12 hours of operation in order to exhaust the plant material completely.
