Colorless mobile liquid.

Solubility

Insoluble in water, poorly soluble in alcohol, miscible with oils.

Odor

Peppery-minty, refreshing and slightly citrusy odor of poor tenacity.

Flavor

In concentrations below 20 ppm the material has a pleasant peppery-warm taste, but at higher concentrations it is accompanied by a slightly burning mouthfeel. The taste is more minty, less citrusy, also more peppery than that of the alpha-isomer.

Uses in perfumery

beta-Phellandrene is used to some extent in perfume compositions; the pure grade is preferred for artificial essential oils, Angelica, Pepper, Geranium, etc. The alpha-isomer is generally preferred for Bergamot and Lemon oil imitations.

Uses in flavor

It is used in other countries for Pickle flavor compositions (Dill-effect), artificial Pepper oil, etc.
