Solubility

0.07% soluble in water, soluble in propylene glycol, miscible with alcohol and oils.

Odor

Warm, sweet, rooty-fruity odor of moderate to poor tenacity.

Flavor

Pungent-sweet, fruity-rooty odor with burning sensation at high concentration.

Uses in perfumery

Methy] salicylate is used in perfume compositions as a minor ingredient in many types of heavy exotic floral fragrance, e.g. Tuberose, Cassie, etc. and in artificial Ylang-Ylang.

Uses in flavor

The title ester is widely used in flavor compositions, and often forms the chief ingredient, if not the only flavor ingredient, in certain types of consumer product.

Production

Produced by direct esterification of salicylic acid, using a large surplus of methanol to reduce the temperature and thus avoid phenolic decomposition of the sensitive acid.
